
Wild boar is a lean and tasty meat that lends itself to many recipes, here is Elisa and Laura’s proposal.
Ingredients for 4 people:
500g sliced boar loin,
flour as required,
dry Marsala wine as required,
herbs and spices as required (myrtle berries and leaves, sage, rosemary, pink pepper, a pinch of nutmeg)
salt,
pepper
extra virgin olive oil.
Method:
Chop the mixture of herbs and spices with a knife, toss the boar slices in floor and fry them in oil, quickly sprinkling each side with the mixed herbs. Add Marsala wine and simmer until reduced. When cooked, they should be pink inside.
Serve with a glass of Chianti Colli Fiorentini Riserva – La Spinosa red wine
