Recipe: Rabbit with cabbage and Merlito wine

Ingredients for four people:

1\2 rabbit torn to pieces

5 cloves garlic




extra virgin olive oil

2 tablespoons honey

Merlito red wine produced by Azienda Agricola La Spinosa

Ingredients for the side dish:

1\2 cabbage camerlito_coniglioppuccio

1\2 apple

1 pink onion



Sauté, over a low heat, the rabbit seasoned with salt, pepper, olive oil, bay leaves and garlic. When it is well colored, raise the heat and add a glass of red Merlito wine, evaporate the alcohol and lower the flame by covering with a lid. When cooked, add the honey and cook for 5 more minutes.

Meanwhile, finely chop the cabbage, onion and apple. In a pan with oil, start cooking with the onion over a low heat, then add the cabbage and apple with the bay leaves. Leave to cook over a low heat and, if necessary, add a little water. Season with salt and pepper.
