On Wednesday, July 8 there was the first Cooking Show at the Toscana Fuori Expo by eChianti. Inaugurating the stage were Elisa Berghi and Laura Franceschetti from Cooking in Chianti and authors of Ratatouille in Chianti.
The two chefs have delighted the Toscana Fuori Expo visitors with a Chianti flavored mousse made with ricotta cheese, saffron and honey. We will reveal the recipe and how to make it.
Ingredients for 4 people:

For the ricotta mousse:
400g ricotta
Salt and pepper
0,5gr saffron powder
For the barley:
125g of boiled barley
Pink Himalayan salt to grind
2 fresh mint leaves
50g Tuscan pecorino cheese
Extra virgin olive as much as necessary
For the aromatic honey:
4 teaspoons of chestnut honey
4 teaspoons of vinsanto dry wine
5cm rosemary
20 grams of pine nuts
4 200cc cups
